Whilst all varieties of lavender are actually edible, you should ensure you only choose lavender that is clearly described as culinary lavender, as sold here, for use in any recipes for drinks, cooking or baking. This will ensure that it has been specifically grown, stored and packed to food grade standards. You could of course grow your own lavender if you have green fingers. As lavender is a dried product it will keep indefinitely if stored in an airtight container in a cool, dark place. Culinary lavender can be be used in many different ways and lends itself to both savoury and sweet recipes. It is not dissimilar to rosemary and can be used in the same ways, such as adding to sauteed potatoes or roast vegetable medleys, which fill the air with a fantastic aroma while cooking. It is well known for being used to make lavender lemonade and sweet treats such as shortbread, scones, vegan meringues and ice-cream. One of our favourites is lavender and vegan cheese savoury scones, perfect hot, straight from the oven or left to cool and used for packed lunches and picnics. Lavender flowers can also be brewed to make a herbal tea which has a wonderful aroma and is very soothing to drink, helping you to relax from the first delicious sip. It has an amazing, unique, slightly sweet, floral taste and a delicate colour.
Our lavender flowers are grown in Provence, France. The delicate lavender flowers bloom from around the last week in June until the beginning of August and are harvested in the traditional way, then air and sun dried. Lavender is often used for its medicinal benefits such as helping to relieve anxiety and treating fungal infections and hair loss.
