Traditional jelly is made using animal derived gelatine. These days there are vegan & vegetarian friendly ways to make jelly. You can use a pre-flavoured packet of jelly crystals (available below) for a super quick and easy result or be adventurous and make your own flavour from scratch using plant based gelling agents as vegan alternatives to gelatine. There are so many possibilities when making your own. You could use seasonal fruits such as blackberries, currants, strawberries etc or something a little more exotic such as pineapple or kiwi or any variety of tined fruit as the flavour base and also add the whole or sliced fruits to the mix. Adding fruits to jellies is an excellent way to encourage children to eat more fruit. Why not try making a lavender jelly using our culinary lavender. Jellies can also be made as a savoury item. Tropical Fruits Flavour Jelly Crystals Ingredients:
Raw cane sugar, gelling agents (carrageenan, locust bean gum), natural flavours (orange, pineapple, lemon), citric acid, acidity regulator (potassium citrate).
Strawberry Flavour Jelly Crystals Ingredients:
Raw cane sugar, gelling agents (carrageenan, locust bean gum), citric acid, natural strawberry flavour (0.9%), natural colour (beetroot red), potassium citrate.
Raspberry Flavour Jelly Crystals Ingredients:
Raw cane sugar, gelling agents (carrageenan, locust bean gum), citric acid, natural colour (beetroot red: beetroot extract), natural raspberry flavour(1.1%), acidity regulator potassium citrate).
Lemon Flavour Jelly Crystals Ingredients:
Raw cane sugar, gelling agents (carrageenan, locust bean gum) , citric acid, natural lemon flavour(0.7%), acidity regulator (potassium citrate), natural colour (curcumin).
How to make jelly using flavoured jelly crystals
One individual packet of jelly crystals makes 1 pint of jelly.
Instructions:
1. Empty the jelly crystals into a measuring jug.
2. Make up to one pint with boiling water. (The jelly can be made a little firmer by adding slightly less water if prefered.)
3. Stir until all crystals have dissolved.
4. Leave to cool a little before pouring into a bowl or mould of your choice.
5. Leave to cool completely and then place in a refrigerator until thoroughly chilled and set.
